In the ingredient list, the quantity for extra-virgin olive oil should be given as 80 grams (8 tablespoons or ½ cup), not 80 grams (5¾ cups).
Additionally, to make the dough recipes in this book without using a sourdough starter, you can make a commercial yeast pre-ferment instead and use it at the same quantity given for the starter.
To make a commercial yeast pre-ferment, use these ingredients, which also appear in the top-right corner of page 257:
Sourdough Starter Substitute
Pre-ferment ingredients (aka biga, sponge, polish)
70 grams (5 tablespoons) water
0.5 gram (¼ teaspoon) instant yeast
80 grams (½ cup) high-protein or bread flour

Step 3 should begin with “Evenly top the pizza with the anchovies and garlic.”
And the following paragraph is missing from the method after step 4: “Bake the pizza in its pan directly on the pizza stone for 15 to 20 minutes, until the crust is golden brown and the cheese has begun to brown.”
